Wattle Espresso is a local colab that starts with a mature cheddar.  It is then rubbed with Q Roasters Jiwaka coffee and roasted wattleseed ethically sourced by My Dilly Bag.  The end result is a creamy cheddar with deep nutty caramel undertone, finishing with a coffee buzz from the rind.

 

The 1.25kg wheels are distinctive with their gritty dark brown rind that contrasts with the creamy coloured paste.

 

A cheese that is comfortable with coffee, liquor, port, stout or porter.  It will also pair with a leathery and bold red wine.
