Extravagant is decedent. Starting with the luxurious velvet rind and finishing with the silky paste this cheese gives you more than you would expect from a triple cream brie. The delicate mushroom and straw flavours enhance with age adding complexity and interest. Its texture also changes as it gets older, becoming softer and oozier.
Inspired by Brillat Savarin and his home on the Great Ocean Road, Matthieu Megard, a French cheesemaker, has made this cheese using organic milk from a herd of cows that graze in Timboon.
